These Mexican beans grown in the Sierra Madre de Chiapas indeed have “big flavour”. Very versatile, we could roast these any number of ways but we think that the sweet spot is around a medium because we can enjoy both the floral fruity sweetness, yet still get hints of spice and smoke.
